peeled the lemons with a potato peeler and julianned the zests. I peeled off the pith before halfing and removing the seeds (which I saved to put in a cheesecloth bag for overnight soak with the rest). Then I quartered the halves, sliced them thinly and added them to the peels/zests with 4 cups water for the 24 hour soak. Tomorrow I will finish the marmalade. Do you think I will not have enough pectin with the piths removed? I will report back tomorrow after I "jamm it up."
