I had this for lunch today:

1 ripe tomato
1 ripe avocado
1/4 cup of fresh pesto (Fresh Basil, garlic, olive oil, and ParmReg)
Season to taste. I used Penzey's Adobo Seasoning, Chipotle Chili Powder, Onion Powder, S&P.

Dice tomato, mash avocado, mix all.
