I'm reading "Tartine All Day" by Elizabeth Prueitt and she has a lovely recipe for Savory Bread Pudding with Wild Mushrooms and Bacon (linked).

More important, she says this:
"If you have greens on hand, steam or lightly saute them, as you would spinach or kale, and fold them in just before baking"

[ha...autocorrect changed GREENS to GRINS. I suppose it would make Popeye happy.]
