Chicken in Brandy [Kotopoulo Tis Hydra]
serves 4
from Adventures in Greek Cookery
by Stella Kopulos and Dorothy P. Jones

INGREDIENTS:

1 three lb frying chicken
salt and pepper
1/4 lb butter
3/4 cup brandy
1/2 cup heavy cream

PREPARATION:

Wash the chicken, cut into quarters and sprinkle with salt and pepper. Melt the butter in a heavy skillet and fry the chicken until golden brown. Pour the brandy over the chicken, cover tightly, and simmer 45 minutes. Slowly add the cream and cook 10 minutes longer.
