I think I would definitely increase the amount of cocoa powder. One Tbl. cocoa powder for 24 cupcakes just isn't happening in this house! :)
With the ganache, cream cheese filling, and chocolate mocha cake, I don't see how she could pronounce it 'tasteless'... and the 'sandy' comment sounds like she overbaked the cake OR undermixed the filling.
