I had guests coming for dinner and I had to work all day, so this menu allowed me to do most of the work the night before:
Pinky's Pink Peppercorn Feta with crackers
Spicy Garlic Shrimp
Grilled Chicken with "Unbelievable Chicken Marinade"
Linguini with Garlic and Rosemary Oil
Vegetable Kabobs
Tomato and Cucumber Salad
Brownies and Ice Cream (the guests brought these)
The night before:
Cut up chickens, made marinade and let chicken marinate overnight
Reduced the stock and simmered the garlic and rosemary mixture for the linguini
Grated cheese and chopped parsley for the linguini
Skewered the veggies and made a basting sauce for them
Defrosted shrimp (TJ's raw with the tail on--no cleaning!)
Before the guests arrived:
Lit grill
Put pasta water on to boil
Made up the feta appetiser
Put salad together
Slow-cooked the garlic and red pepper for the shrimp
That left only:
Sauteeing shrimp
Grilling chicken and veggies
Boiling and tossing pasta
Dressing salad
I actually got to visit with our friends and enjoy our own party! I guess I'm learning a thing or two in my old age.
